Ammi’s Secret Brinjal Curry Recipe: A Delicious Blend of Flavors

Ingredients:

  • ½ kg Chopped Brinjal
  • 2 Big Chopped Tomatoes
  • 2 Big Chopped Onions
  • Few strands of Curry Leaves
  • 3 Green Chilies
  • 1 full Garlic, crushed
  • ½ cup Coriander Leaves
  • 1 tbsp Ginger Garlic Paste
  • 1 tsp Red Chilly Powder
  • ½ tsp Mustard Seeds
  • ½ tsp Turmeric Powder
  • Salt, to taste
  • 2 tbsp Soaked Gram Lentils (Optional)
  • 2 tbsp Soaked Moong Dal
  • ½ cup Oil
  • 2 cups Water

Note: Keep water in a bowl and add Brinjal immediately after chopping.

Cooking Method:

  • Once oil is hot, add crushed garlic.
  • Then add Green chillies, Curry Leaves, and Chopped Onions.
  • Add mustard seeds and fry all the ingredients.
  • Add Soaked Gram lentils and fry well.
  • Once it’s fried, add ginger garlic paste, add salt, and fry well.
  • Add chopped tomatoes and fry until oil starts releasing from the ingredients.
  • Then add Turmeric Powder and Red Chili Powder.
  • Add Soaked Moong Dal, mix well and add Chopped Brinjal, mix well and fry for 5 minutes.
  • Then add 2 Cups of water, mix well, and cook again for 10 minutes.
  • Open the lid after 10 mins, mix it once, then cook again for another 5 minutes.
  • Garnish it with coriander leaves.
  • It tastes delicious with Rice flour Roti, Chapati, Jowar Roti, and white Rice.
