Ingredients:
- ½ kg Chopped Brinjal
- 2 Big Chopped Tomatoes
- 2 Big Chopped Onions
- Few strands of Curry Leaves
- 3 Green Chilies
- 1 full Garlic, crushed
- ½ cup Coriander Leaves
- 1 tbsp Ginger Garlic Paste
- 1 tsp Red Chilly Powder
- ½ tsp Mustard Seeds
- ½ tsp Turmeric Powder
- Salt, to taste
- 2 tbsp Soaked Gram Lentils (Optional)
- 2 tbsp Soaked Moong Dal
- ½ cup Oil
- 2 cups Water
Note: Keep water in a bowl and add Brinjal immediately after chopping.
Cooking Method:
- Once oil is hot, add crushed garlic.
- Then add Green chillies, Curry Leaves, and Chopped Onions.
- Add mustard seeds and fry all the ingredients.
- Add Soaked Gram lentils and fry well.
- Once it’s fried, add ginger garlic paste, add salt, and fry well.
- Add chopped tomatoes and fry until oil starts releasing from the ingredients.
- Then add Turmeric Powder and Red Chili Powder.
- Add Soaked Moong Dal, mix well and add Chopped Brinjal, mix well and fry for 5 minutes.
- Then add 2 Cups of water, mix well, and cook again for 10 minutes.
- Open the lid after 10 mins, mix it once, then cook again for another 5 minutes.
- Garnish it with coriander leaves.
- It tastes delicious with Rice flour Roti, Chapati, Jowar Roti, and white Rice.
